Shallots are a very delicious and savory gourmet treat. The flavor is in between an onion and a garlic, but smoother and sweeter. Use shallots in place of onions the next time you need them and you'll be pleasantly surprised by the succulent and delightful oniony/garlic flavor!
Shallots are also very easy to grow, and are highly productive! I've received as much as 10x as many pounds as I planted before!!
I sell my shallots as mixed sizes. Which means that you can eat them all, plant them all, or better yet; a little of both (planting the smaller ones and eating the bigger)!

Planting...
Plant each bulb about 8"-10" apart, in rows 12" apart during the fall (October-early December, or when you plant garlic). Make sure to plant them right side up only deep enough to have most of the bulb beneath the surface, but the neck still exposed. After planting I recommend mulching for better weed control the following spring and water management. In the spring keep the soil moist and weed free. About midsummer your bulbs are ready to pull when the tops begin to fall over and start dying back. Pull each cluster from the soil and leave the bulbs to cure in a dry shady spot for 3-6 weeks before cleaning off the loose soil and storing them in a dark cool place. Eat the largest bulbs first and save the smaller ones for last, or for replanting since they last the longest. Enjoy!
